1 large Finely chopped onion

1 Finely chopped leek

250g Butternut squashdiced

3 Garlic Clovescrushed

1 tsp Ginger

1-2 tbs Curry Powder(depending on how spicy you like it)

1 tablespoon Soy sauce(or tamari or coconut of amino)

3.5 cups (840ml) Chicken or vegetable stock

Salt and pepper to taste

Spray oil

Spray a pan over a medium high heat with spray oil. Add the onion and leeks and fry till it turns into light brown in color. |

Then add the garlic, ginger, butternut squash, curry powder and soy sauce and stir. |

Mix them using a blender and blend till smooth. |
