Ingredients

Adjust Servings:
1 large Finely chopped onion
1 Finely chopped leek
250g Butternut squash diced
3 Garlic Cloves crushed
1 tsp Ginger
1-2 tbs Curry Powder (depending on how spicy you like it)
1 tablespoon Soy sauce (or tamari or coconut of amino)
3.5 cups (840ml) Chicken or vegetable stock
Salt and pepper to taste
Spray oil

Spray a pan over a medium high heat with spray oil. Add the onion and leeks and fry till it turns into light brown in color.

Then add the garlic, ginger, butternut squash, curry powder and soy sauce and stir.
Pour in the stock, bring to a boil, reduce heat and simmer for 25-30mins.

Mix them using a blender and blend till smooth.
Add back to the saucepan on a medium heat, season with salt and black pepper to taste and bring it up to thicken.
(If it too thick you can just add a little more stock).
