Ingredients

2 to 2.5 cups White button mushroomssliced or chopped

2 cups Spring Onion (Bulb & Greens)sliced or ¼ sliced spring onion whites

2-3 Garlic Clovesfinely chopped

½ teaspoon Gingerfinely chopped

1 teaspoon Celeryfinely chopped

½ teaspoon Black pepper powder

1 teaspoon Soy sauce

3 cups Water

5 tablespoons Spring onion greenschopped

Heat 1/2 tablespoon sesame oil in a pan. Then add the chopped garlic and ginger. Sauté for a minute. |

Then add the sliced spring onion whites & sauté for a minute. Reserve the spring onion greens to be added later. |

Add 3 cups of water . Simmer the soup for 5 minutes on a low to medium heat without a lid. |

Add 1 teaspoon soy sauce. You can add less or more soy sauce as per taste. Then add 1/2 teaspoon black pepper powder and salt as per taste. |

Cover with a lid and simmer the soup on a low to medium heat for 15 minutes or till the mushrooms are cooked. |

When done, switch off the flame and add 5 tablespoons chopped spring onion greens. You can also add bit of rice vinegar, if you want. |

Serve clear mushroom soup hot with or without any accompaniment. |
