Ingredients

Adjust Servings:
2 to 2.5 cups White button mushrooms sliced or chopped
2 cups Spring Onion (Bulb & Greens) sliced or ¼ sliced spring onion whites
2-3 Garlic Cloves finely chopped
½ teaspoon Ginger finely chopped
1 teaspoon Celery finely chopped
½ teaspoon Black pepper powder
1 teaspoon Soy sauce
3 cups Water
5 tablespoons Spring onion greens chopped
Salt to taste

Steps

Heat 1/2 tablespoon sesame oil in a pan. Then add the chopped garlic and ginger. Sauté for a minute.

Then add the sliced spring onion whites & sauté for a minute. Reserve the spring onion greens to be added later.
Now add the sliced mushrooms and chopped celery. Stir for two minutes on medium heat.

Add 3 cups of water . Simmer the soup for 5 minutes on a low to medium heat without a lid.

Add 1 teaspoon soy sauce. You can add less or more soy sauce as per taste. Then add 1/2 teaspoon black pepper powder and salt as per taste.

Cover with a lid and simmer the soup on a low to medium heat for 15 minutes or till the mushrooms are cooked.

When done, switch off the flame and add 5 tablespoons chopped spring onion greens. You can also add bit of rice vinegar, if you want.

Serve clear mushroom soup hot with or without any accompaniment.
