1 cup Vegetable broth
1 cup Water
2 teaspoons Curry Powder
2 tablespoons Lemon juice
1/2 cup Chopped herbs (mint, cilantro, and parsley)
1/2 cup Raisins
1 (15 oz.) Chickpeas Can
1/2 cup Almonds unsalted, roasted and chopped
1/4 teaspoon kosher/sea salt
1/4 teaspoon Black pepper powder

Rinse quinoa under cold water using a fine mesh strainer.

Add quinoa, water, broth, and curry powder to a pan and let it boil. Turn down heat, cover, and cook 13-15 minutes or until quinoa is cooked and liquid has been absorbed.

Turn off the heat, and let quinoa sit for another few minutes to be cooked well then fluff with fork.

Transfer cooked quinoa to a mixing bowl and add lemon, herbs, raisins, chickpeas, almonds, salt, and pepper. Toss until mixed well.
