1 cup Uncooked white quinoa

1 cup Vegetable broth

1 cup Water

2 teaspoons Curry Powder

2 tablespoons Lemon juice

1/2 cup Chopped herbs(mint, cilantro, and parsley)

1/2 cup Raisins

1 (15 oz.) Chickpeas Can

1/2 cup Almondsunsalted, roasted and chopped

1/4 teaspoon kosher/sea salt

1/4 teaspoon Black pepper powder

Rinse quinoa under cold water using a fine mesh strainer. |

Add quinoa, water, broth, and curry powder to a pan and let it boil. Turn down heat, cover, and cook 13-15 minutes or until quinoa is cooked and liquid has been absorbed. |

Turn off the heat, and let quinoa sit for another few minutes to be cooked well then fluff with fork. |

Transfer cooked quinoa to a mixing bowl and add lemon, herbs, raisins, chickpeas, almonds, salt, and pepper. Toss until mixed well. |
