Start by heating a bit of oil a deep saucepan over medium-high heat. Gently fry the garlic, ginger, celery and onions for 3-5 minutes. |

Add the diced sweet potatoes, the turmeric and curry powder and season with a pinch of salt |

Bring the whole vegan sweet potato soup mixture to a boil, and then reduce the heat and simmer for 15-20 minutes—until the potatoes are fork tender. |
