Thanks, I really need to decide which ones to go with as the 26cm Meyer HT+ ones look like they're not coming back into stock anywhere and I want aluminium finish rather than non-stick.  Plenty to choose from in this thread though, so I just need to make my mind up now!

What ever pan you decide NJ, 24cm is the size used in most BIR's. Hope this helps.


EDIT=Actually I don't know this for fact personally, but it is the same size the IG use and the same size reported by several other members who have entered BIR kitchens.

Thanks Martin, will check out that site.  Axe I was thinking of going for a 26cm pan because I'm not as skilled as BIR chefs and will doubtless slop the sauce over the cooker unless I have a little bit of spare capacity in the pan! My hob is electric, so I don't need to select a small pan so that gas flame can lick up the outside of it (possibly one reason why smallish pans are used in BIRs?)

NJ, it's more to do with portion size and the ability to cook the curry properly. In a larger pan you will need more oil and base to cook properly.
However, if your cooking a double portion (yourself and the wife), then the larger pan will be better suited.

To be honest that's why I went for the 26cm, as I always cook double portions.
I wouldn't go bigger though.

I bought a new aluminium 20cm pan that does the job just fine for me. I also bought a cast iron one just for adding garlic tarka's at the end of the cooking.

I had one of the 26cm ones on order from Amazon, but I have just cancelled it after watching the guy in Chutneys. I've ordered a 20cm one now which I appreciate is quite small but it is about what they were using there.

Trust me it'll be too small.  If it's not too small come back and tell me and I'll eat my words with veg ghee on

My 26cm omelette pans from dadibhais arrived today and wow, aren't they good?  Look like they would cost three times as much as the paltry
