i like how you said simmer until the sauce sweetens, think thats where i have went wrong with base sauces in the past - bought all fresh ingredients today - will be trying this tomorrow as i am from Glasgow

If you hadn't posted your vid, one of the CR0 video hounds would have.
All the vids C2Gone did, I don't remember him actually posting "one" on CR0. :-\ ;D ;D

Anyhoo, well done , much better video and onion chopping skills, you'll be using a tomato knife next.

Looking more like a Sassenach Garabi now, with a very familiar recipe and long home cooking times, closer to Bangladeshi than Pakistani BIR.
You need a pressure cooker to speed things up or a maybe just a bigger pot.

Swapping out just cumin seeds for a full bouquet garni, I've made this base many times over the years
just blended much more, sieved and diluted with water.

Well worth a try peeps, I'd give this one a thumbs up ;) and never call Glasgow Takeaways again ;D ;D ;D

Have u cooked a base overnight to extract the sweetness of the onions? I doubt any of us has, I will experiment and try it

Ahh, just remembered this, I made a couple of base's in a slow cooker once, which is tucked out the back in the utility room.
The first one turned out OK cooked on high.
But the second went like this.... Did the prep and switched it on medium at 8pm, shut the door and left it to do it's thing,
Of course I forgot about it  ::) and in the morning, to shouts of what the hell's that smell,
I came down the stairs to the most pungent, acrid pong, that you can't really describe in words.
Nothing was burnt, the onions were just very dark and stewed.

So the recipe for this is slow cook on medium for 13 hours. Have Fun with it. ;D ;D

hopefully the witch hunt is over..when i first came to this site i had only been working in my local takeaway for about 2 weeks and i thought i had a rough idea how to make the sauce but i was way of track...it's took me about 5 months of researching and working in the shop to get it right..scaling down was the difficult bit.....the new improved recipe has only 3.5 killo of onions and 1/2 litre of oil....can't scale it down anymore than this....the final result is concentrate base sauce..watch my videos you will see what i mean.............Hopefully i'm no longer the bad guy on here, it was never my intention

@ bigboaby1, i made this base to exact spec with 3.5 kilo of onions, tasted very similar to most bases i have made, made a simple madras with your recipe also - have to say i am well impressed - my search is over - thank you very much
