hi ppl was wondering if u could give me some help plz , i have been trying to buy kebab paste and have had no luck at all sourcing any ( a pitfall of living in rural Linc's i guess lol) question is does any 1 have a recipe for said base or as any 1 got a jar and can post the ingredients for me to try and replicate it from my store cubard at home ty all  ;D

Here's the ingredients from one commercial kebab paste.  Wouldn't it be less hassle to order it on the web, along with a few other bit of course, and have it delivered?  ;D


Vegetable Oil, Garlic, Rusk (Wheat Flour, Salt, Raising Agent: Ammonium Bicarbonate), Water, Salt, Ginger, Cumin, Coriander, Turmeric, Acidity Regulator: Sodium Diacetate, Spices, Tamarind, Food Acids: Citric, Acetic, Preservative: Sodium Metabisulphite.

No worries mate.  I'm sure your efforts would be good but there's enough to be doing in this curry making lark as there is without adding to the burden  ;D.  Let Mr Patak take the strain eh?  Spicesofindia is one starting point ;)

Only asking because I can't recall seeing it being used in any recipes on here. :-\

Some of Dipurajas recipes use it.  Think there's one or two other recipes as well.

Hi Martin
Kebab paste, used in BIR Kebab, Tikka and Tandoori marinades mainly.
The best one, used in restaurants is Pataks Madras Kebab Paste.
only comes in catering size, around 20 quid a jar.

Ok thanks guys.

Like I said, personally hadn't come across it's use so far.
Just re-checked all the kebab recipes I have, and none use it, so probably because it's only available in the large jars.

I've got the madras kebab paste ( pataks) 2.4kg ?9
Don't often use it , tried it in my sheeks nothing special
Razors with kashmiri far superior
