curry gravy

there are some very good gravys on this site,but none of them are the sizes that i make, so what i would like to ask, if anyone out there would now many extra spice i would have to use to get a nice balance of flavors. the size of pot i use would fill 35 take away cartons, the gravy i make at the moment is along the same lines as the ones on this site,the one i make has real fennal, 5k   onions ,12oz of garlic 8oz ginger,10 fresh chillis green,carrots, cardamom pods about 20, love cardamoms, Celery, two or three sticks,fresh coriander roots,very hard to get hold of coriander with good roots on them,tomato puree,top the pan up with a good chicken stock ,bring to boil then turn the heat down,cook slow for a good one and a half hours

At the moment I am very content using Abduls base (http://www.curry-recipes.co.uk/curry/index.php?topic=5970.0) - If you scale this up 3 times it should yield the quantity you seek.

There are also many recipes to match the base posted for free on this site too!

5 kilos of onions :o :o.  That's positively commercial to the amount i cook up.  Are you in practice for opening up your own BIR jedkev :D.  Welcome to the forum.

was thinking that it would take more than1.5 hours to ccok that amount of onions.
i've just made chewys 3 hour base with 3 kg onions

I really think that's a bit hard to answer as it would depend on which gravy you were looking at upscaling.

You'd have to work out the ratios individually for each gravy you were to try.

For instance once recipe might call for 2kg of onions, another might call for 8 medium sized onions, so it's hard to give hard and fast rules.

I do think this brings up an interesting question though: perhaps it would be better for the forum if we could decide on a standard to work from - like say: base ingredients per 2kg of onions, or base ingredients per 4litre pot etc.

Then we could multiply up, give or take.

I do have to ask though; why would you want to make 35 cartons of a base you've never first tried at smaller quantity?

Hey CH ive just peeled and chopped 25 kilos of onions this morning and its only 0704 am mind you i am a little commercial - got a couple of bases to do today and Chicken Tikka - LOVE doing Chicken Tikka i just have to sample a piece or two when it comes out of the tandoor - mind you its market day first then back at it

I think Jedkev is a little commercial - wonder what he is doing and where - Jedkev what are you upto??

25 kilos  :o :o :o I must have missed something somewhere.  What an earth are you going to be doing with 25kg of onions Rich?  Supply BIR to the surrounding neighbourhood???? ;D

What is the average amount of curry base used for say two meals . Does it differ for different types of meal. What is the standard portion size of a base 200/300ml
