Topic: Tonight's dinner - Roshun Mirchi Moshla, Rogan Josh, Korma

Using Chewytikka's base and spice mix, and (trying) to use the singeing technique.

One attempt had to be binned as I literally turned the pan black :|

Subsequent attempts involved a lot of brown stuff being scraped back into the pan, and coughing, and very watery eyes.

I'm convinced there's something in this Singeing/pan-roasting idea.

The Roshun Mirchi Moshla (Lit. Bengali: "Garlic Chilli Masala") is my attempt to deconstruct and recreate a favourite form my local takeaway. Probably the best I've made yet - although I think I'd use a bit more gravy sauce next time.

Flavour/texture/aroma wise I'd say there was just a cigarette paper between this and the takeaway

I cant wait to cook my next curry after reading all about the Az experience, I have always been very cautious and probarbly undercooked my spices nearly ever time.

Me too although I did burn the garlic once really badly. I'm looking forward to having a go at this now.
The big problem may well be consistency from now on!

Gary, that looks bloody tasty mate.  Can you post the recipe please.  If looks are anything to go by, the singeing went well.  Lovely plate of grub.  What did you think of it though??? ;D  Incidentally, i had to throw away my first attempt at frying the garlic tonight cos the pan was too hot.  But i am learning.  And that is what this is all about

Have we all done this, My pan can get hot enough also, mine turned black within about 2 seconds, bottom of pan looked like burnt bread crumbs
