Pumpkin and Carrot Jalfrezi - Veggie curry

Got inspired after the debate just made this - great!

Ingredients:
2 .5  tbsp oil
600 ml curry base sauce

Hi Rich
Good post, looks great, who you inviting for dinner.
Just an observation on your technique, if I may.

26 Min's seems quite along time on the hob.

In true BIR style, the veg would be par cooked
and the finished dish would only take about 6-7 minutes
on med to high heat.
Everybody cooks differently, but my understanding of Jalfrezi
is a quick fry up.

Just a suggestion, not a critique.

I didnt want to turn the pumpkin into mush without letting the sweetness come out into the dish - it tasted great to be honest - but very filling!!
I would say that this could be par cooked if i did it again and it could be turned into a Pumpkin Danshak  as well - not sure how the old flatulence level would be after so much veg though!

Hi Abdul none at all mate - it would be great!  after all we are all here to enjoy a good curry - and to be honest this did taste great!! - and i did use your base you posted here!

Hi Abdul,
It would be good to see some pictures of this dish being cooked in your restaurant/takeaway kitchen if possible.

Fantastic mate -- hope it turns out as well - the taste was great! look forward to the snaps of it on the menu board and folks enjoying it
