Mojos Madras
thanks curry friends. i've read and read post upon post of curry bases and sauces. decided to have a blast myself, so here goes
i used Curry Kings Base from here
http://www.curry-recipes.co.uk/curry/index.php?topic=179.0
but changed from the green pepper to 2 cups of frozen mixed peppers(yellow red green) because i didn't have any fresh.
my ingredients as follows:
base sauce
5 tbsp veg oil
1 small onion finely finely diced
1 green finger chilli finely diced
1 red finger chilli finely diced
1 tsp garlic puree
0.5 tsp ginger puree
3 tbsp tomato paste
water
1 tsp mixed powder
1 tsp salt
0.5 tsp lemon juice
1 tbsp hot chilli powder
1 tsp fennel seeds
1 tsp cinammon powder
1 tsp sugar
coriander leaves and stalks
0.5 tsp dried fenugreek leaves
1 tsp garam masala
1 tsp madras curry powder
turned out just fine...better than some TAs where i stay...which really wouldn't be hard.
fry 1 finely diced onion/green and red chilli in 5 tbsp oil for about 2 mins
add garlic and ginger and fry for about 1 min
add 2 tbsp tomato paste mixed with 8 tbsp water and fry for about 2 mins
add mixed powder and salt.fry for 1 min
add lemon juice and stir
add hot chilli powder and stir
add 1 ladle of COLD base sauce and heat for 2 mins
add 1 tsp fennel seeds. stir and reduce
add 1 ladle COLD base sauce..stir and gently heat
add 1 tsp cinammon powder.stir
add 1tsp sugar.stir
add 200ml COLD water and some chopped coriander leaves and stalks.
heat and reduce
add 1 tbsp tomato paste stir
add 0.5 tsp dried fenugreek leaves
add 1 tsp madras curry powder
add 1 tsp garam masala
stir and gently reduce to desired consistency
last of all....enjoy
thanks to you all for setting me on the road to curry greatness...just gotta improve a bit on this now
if anyone tries this, it would be good to hear some feedback. good or bad
