Actually, not that different after all :   coriander seeds, cummin, green cardamom, cloves, black peppercorns, cinnamon, bay leaves, nutmeg, black cardamom.  Perhaps the most significant difference is the timing -- she adds the GM after the chilli and salt, but at the same time as the cumin and methi.

Hi Phil.
In your madras recipe you specify using stage 2 sauce, whereas KD would seem to be referring to stage 3.
Any particular reason for the change?
