chicken madras
i cook my chicken breasts whole wrapped in tin foil in the oven till cooked
to a pan or wok
add 3 tablespoons of veg oil then add
1 teaspoon of garlic puree
1 teaspoon of ginger puree
cook for about 30 seconds then add
1 tablespoon of tomato puree
stir together then add
1 teaspoon of chilli powder
1 tablespoon of spice mix (i used Bruce Edwards spice mix ) cook for a moment
add 1 ladle of base sauce at a time (4 ladles in total) - here:

chop the cooked chicken and add to the sauce
add a pinch of dryed methi leaves
and finely add chopped fresh coriander
simple and easy
