Hi Ranat

Welcome to the forum.

I'd start off by using a Base recipe that has a Madras recipe to go with it. Then later you can experiment with 'mix and match'.

A simple Base recipe with Madras here:-

madras is my out and out fav

even in the BIR's and TA there are massive variations.

as SnS says this is one you will need experiment with.

i started out here, Parker21's http://www.curry-recipes.co.uk/curry/index.php/topic,1454.msg12717.html#msg12717

i don't like lemon juice in a madras for example. i do like it tomatoey and now add passata (following CK and adriandavidb suggestion).

i can post my variation to the parker21 recipe if u need for comparison - it's not yet posted as it remains in work.

Well that entirely depends on what the one from your local Indian is like doesn't it R22?  :-\

Can you describe it?  :P

Hi Ranat22,

There are also several other base/madras "partnerships" you could try.

Darthphal's base and madras recipe is very good and I recommend it: http://www.curry-recipes.co.uk/curry/index.php?topic=674.0

You could also try Bruce Edward's (his base, in particular, is good): http://www.curry-recipes.co.uk/curry/index.php?topic=2815.0

There are also several others (rajver, curry king's, etc) but you'll need to hunt through the base recipes section here: http://www.curry-recipes.co.uk/curry/index.php?board=2.0 and the madras section here: http://www.curry-recipes.co.uk/curry/index.php?board=52.0 to find them.

You could also look through the vindaloo section (reducing the amount of chilli) here: http://www.curry-recipes.co.uk/curry/index.php?board=53.0

for me the base ingredients are less important than the actual cooking ingredients for example using garlic on it's own c/w with garlic/ginger paste. with passata c/w without passata etc.
