hi
im new to the forum and after searching for the recipe for a takeaway madras ive noticed that there are several and they seem have different takes on it.....could anyone give me the closest version to my local indians....cheers all

Hi Ranat

Welcome to the forum.

I'd start off by using a Base recipe that has a Madras recipe to go with it. Then later you can experiment with 'mix and match'.

madras is my out and out fav

even in the BIR's and TA there are massive variations.

as SnS says this is one you will need experiment with.

i don't like lemon juice in a madras for example. i do like it tomatoey and now add passata (following CK and adriandavidb suggestion).

i can post my variation to the parker21 recipe if u need for comparison - it's not yet posted as it remains in work.

Well that entirely depends on what the one from your local Indian is like doesn't it R22?  :-\

There are also several other base/madras "partnerships" you could try.

cheers for the helpfull links,i suppose everybody has different tastes,so experimenting with the base sauce to find out what ingredients i might want to add or take away.

for me the base ingredients are less important than the actual cooking ingredients for example using garlic on it's own c/w with garlic/ginger paste. with passata c/w without passata etc.
