Hi
Has any one used or come across fresh indian bay leaves i had a chicken tikka shalong the other night it had 3 large bay in it and some cinnamon stick iv had a look in my indian markets but can only find small dry ones any ideas i know i could use dry but wanted to try it with fresh.

They would've used dried, but will appear fresh once rehydrated in the sauce they're cooked in.
If you're in London, go to bangla stores in Southall. They have pallets of the larger dried leaves!

Yes, even in Nepal I was unable to locate fresh

, only dried. I am sure that /somewhere/ in the world they can be found fresh, but I have yet to find any, and I don't think it really makes any difference, unlike smaller leaves such as mint, coriander, etc., where the difference between fresh and dried is very marked. Curry leaves, I suspect, are somewhere on the boundary between the two groups : better fresh, but OK dried.

Yes, its a nice touch to see a huge leaf sitting atop the curry when opening a long foil container.

It was an eat in ;D it also came with 3 deep fried green chillies which i was warned would be very hot i did try one but it just crumbled like dust not nice

The bag I bought has some huge leaves that are folded over amongst smaller ones and it is sort of difficult to decide what to do when a recipe says to use 2.
A bit like cinnamon sticks. Some are skinny little things while others contain 3 times the mass of bark.

Have you ever used bay leaf powder if so what is your opinion on it can you taste It! i use it sometimes in small measure it seems ok to me.

I grind/powder Tej Patta, to add to my homemade Garam Masala
and other spice mixes that need aromatics.
