I can't speak for 'all' BIR's, Davey, but I can say that if you are using the H4ppy Chris naan recipe for homemade, restaurant-style naans, I would avoid putting anything on top of or inside the naan before cooking.
Any weight on top will prevent the naan rising properly; similarly stuff rolled into the dough won't allow the dough to cook the same and will be a bit flat.
Do it like BIR's do and make the naan then spread some garlic/butter ghee on top. If you like, put it in the oven, briefly.
