Hi Guys

Just seen this interesting Madras video on CBM's youtube site, anyone know what the brown paste is that he puts in?

Cheers

The problem there is that the sound quality only improves after he has put it in (i.e., moves the camera awy from the pan!) but it sounds like he mentions 'extra spice' or something. Some sort of tarka? But that wouldn't go in at the beginning would it?
So, good question!

That narration says special spices prepared by the chef, I would suggest it's onion paste reduced with spice, CBM has a recipe His ebook.
I think you could prob find it on this forum if you searched.
Hope this helps  :)

That narration says special spices prepared by the chef ...

Exactly right :  "These are special spices prepared by the chef; unfortunately we can't give you the recipe."

I'll go along with bunjarra i think. I have made CBM's bunjarra before and it is lovely so I can see that it would compliment this dish

No, DH, a single page (indeed, up to 10%) is covered by the rationale of 'fair use;' and note the acknowledgement at the bottom.

Cheers!
