Made the madras, Andy, scaled up for three people. Decided to go for your onion/chilli paste thing (but blended it with hand blender). One onion with one green chilli - turned out pale green, but, I feel, added to the final taste. Apart from that, only changes I made was to add a little more Worcester Sauce and an eight of a tsp of red food colouring, as it looked a bit anaemic.
All in all, a brilliant recipe, which I will now use as my standard Madras.
