chicken chilli shatkora + coconut & ginger rice

This curry made me happy. It sure wasn't worse than some of the bad takeaways I experienced in UK.

Things that I believe may have contributed to its success in terms of flavour/smell:
* Chicken marinated using yogurt, garam masala, lemon and g&g.
* Spiced/Filtered oil
* Tomato puree from tins instead of tube
* Use of Kashmiri Mirch, which seems to improve the flavour overall.
* Slight changes in technique/method

I also finally cracked my favorite coconut rice recipe and added some grated ginger throughout

I got inspiration from C44 Chicken Shatkora but as it requires both the C44 base and their mix powder,  I've changed it slightly. I used CBM's base and mix powder #1 (left side)
I'll post a recipe up tomorrow :-)

It's pleasing you're making progress with your cooking, it's so nice when things start coming together and you then start looking quite critically at what takeways offer.

I finally got me some Deggi Mirch/Kashmiri Mirch. It sure is a different beast from just regular Chilli Powder. It appears to be very heavy on Paprika and some other spices. I can see how that could improve (or destroy) a lot of dishes.

Indeed. It can be a bit overpowering, specially if you are aiming for spiciness while this one kashmiri mirch is low on it. I am about to buy deggi mirch to try it, though I only saw 400gm package in my supplier and my girlfriend is calling me a 'spice hoarder' already :(
