British made oven for Naan bread
« on: March 15, 2013, 12:44 PM »
The only other type of food I would love to be able to make properly at home is Pizza.
The main reason of course is having the right type of oven, my local TA has recently added burgers, deep fried chicken and pizza to its menu and they tell me the pizza oven wasn't much off ?10k.

Today I saw this: http://chadwickoven.com/ which also states "The Chadwick Oven cooks pizzas up to 12" in size but that's not all - it will cook flatbreads, such as naans and pittas, to perfection."

Its not exactly cheap at ?360 but I've not come across any domestic appliance that claims to deliver the same result as a commercial operation so I'd say its cheap for what it does.

Some people on here have invested in their own Tandoors so maybe they will find this of interest, heres an article relating to it.

The sceptic in me would suggest re-casting that as "it seems cheap for what it claims to do".

Interesting article, interesting device, nice and shiny.

Like others here (particularly Jerry) cooking good pizza's is a passion of mine and I've been working at it for almost as long as Indian food. I've eaten pizza's all over the world in Italy, USA etc and I think I know what makes a good one and what doesn't.

I gave up making pizza's at home for the simple reason that to cook a thin crust pizza properly you need high heat (both top and bottom) far higher heat than you can achieve in your average domestic oven, which if you're lucky will get to about 250c or 500f. You need 700f minimum to cook the thin crust dough properly, anything lower than that and the base goes biscuity - no matter how good the base dough might be. High heat produces a crisp outside but chewy inside.

I looked at the telegraph article, interesting read, lots of fluff, smoke and mirrors - no heat output mentioned. I looked at the website, lots of fluff, sales material and shiny ovens - no heat output information. That information may well be there, at a cursory glance I haven't seen it and if it doesn't reach 700F, it aint gonna work. I just re-looked and he's saying you need 500F to cook a pizza, erm  ::)

I did see a pizza oven (similar to the Chadwick one) recently that did reach 700F and it was a lot less - about GBP120 from memory.

This is weird in preview the pound sign shows but when posted shows up as a ?, I've changed it to GBP now.

500oC, not 500oF :
Quote
to cook a pizza or a flat bread you need a very high temperature (around 500 degrees centigrade)

Aha! That's more like it, 930F, that puts it in a different light. Thanks for pointing that out.

It's also interesting how it sits on top of a gas cooker.

I've never understood why anyone would buy an electric powered hob of any description. Vastly inferior.

I assume you also light your house with gas mantles, George :)

Guilty as charged.

Whilst I adapted reasonably easily to centimeters and decimal coinage (let's face it the old imperial systems were not logical) I still can't figure out what a 32.2 degree C temperature is whereas I know instantly that 90 degree F is quite hot :)

I agree. I have no idea how anyone cooks anything on an electric hob. When I turn the heat down, I want it instantly, not 5 minutes later.
