what other base sauce recipes are worth a try?
« on: December 30, 2012, 05:47 PM »
I'm about to go make another pot of base sauce. I thought my last effort wasn't up to the standards of my very first attempt, so I thought I'd try again, in an even more controlled fashion. However, before I go about it, I was also thinking I should try other base sauce recipes. Perhaps there are easier/cheaper ones than the darthpahll's base, which is the only one I've used so far.

On the other hand, I don't really have a pressure cooker as some recipes seem to call for it. Would anyone have any recommendations outside darthphall's and preferably without requirements for pressure cooker, if that is a requirement at all. :)

I want to be able to make korma's/jalfrezi/garlic chili/ceylon/madras, so it must be that versatile :)

you don't need a pressure cooker mate, just use a pan with a lid and double the time  ;)

I have been using the Taz base http://www.curry-recipes.co.uk/curry/index.php/topic,4163.0.html
With exceptional results.

Before that i used  CA base http://www.curry-recipes.co.uk/curry/index.php/topic,3772.0.html
This base is brilliant because it is so versatile.

I have made a lot of the bases from this site but at the moment i have been in an experimenting mode for the past few months so these two are great, i don't wish to offend any body else who has posted base gravy/sauce recipes on here it just seems at the moment these two really do work for me.

Thanks guys! I just looked at both recipes (CA and Taz) and I realize I'm sort of challenged at the moment as my food weight scale just died yesterday, so while I'm very interested in those recipes, I wouldn't probably not know how to select the quantities without disrupting the ratios greatly

I'm curious about CA's base, as I've used his korma recipe successfully using darthphall's base, but it made me wonder about the use of the seeds in taz' - I seem to have everything I need for both, but taz is likely to be easier as I won't need a scales. Would I be able to grind the seeds before adding them to the pan, so that the blender doesn't let them pass? :)

On another note, I can't seem to find "english" onions here. I don't know if "english onion" is a type of onion, or the origin. In Portugal (where I am at the moment for christmas holidays) I can only find shallot onions (red'ish) and normal onions with origin from portugal, spain and peru. Any advice would be welcome :)

I am fairly new to BIR cooking.  So far I have made CBMs and the three c2go bases; c2go (TA), bangladeshi, and indian.  All good.  The CBM and c2go TA bases suit both mild/spicy dishes better, I feel.  To be fair though if you go with any of the tried and tested bases on here you wont go far wrong.  I am spending what time I have over the next few months on two different balti bases, depending on how that goes, tazs or CAs is next on my list to try.

Rob  :)

If you wish to make curries across the entire BIR range I think you should try another base rather than Darth's. It was ideally suited to the hotter curries he liked.
As UF said the Taz base and the CA base are good but no better than many on here.  The Taz base is great for those new to BIR cooking as there is minimal chance of burning the spices which will ruin any curry dish.  Stephen Lindsay has done  a lot of work on developing and adapting existing recipes specifically for use with the Taz base.
One base definitely worth making is Chewy Tikka's 3 hour base (total time from start to finish).  CT has done many excellent instructional videos to accompany this.  Again, a real bonus for anybody just starting out on the BIR journey.
My personal preference (and a few others) is the Zaal base shown to the "Fleet 5" by chef Az back in Feb this year.
And another base which is beginning to attract attention and receive good reviews is the Little India base courtesy of Curry Barking Mad.
None of the above mentioned require the use of a pressure cooker, although CT's base can be cooked using one and there is a video to help.
Let us know which you decide on and the results as they come in  ;)

gagomes

you don't need to use whole seeds in the Taz base, just use ground powder and reduce the quantity slightly.

Thanks guys!

I should also say that although I've used darthphall's base, I never added chili to the base. I think that's what made it more generic and as far as I can tell, it did not taint a korma in a bad way :-)

Thanks, makes sense. :)
