I have to admit, I didn't read the methodology of the recipe and yes that does sound quite a lot of cream. Just add a drop at a time until you reach your desired consistency :)

Yes, does seem a little on the high side.
Just use your own judgement on the amount.

I tend to build up this dish as it cooks, adding base and cream, thickening and reducing and tasting.

I did a video a while ago with less cream.
