what is your favourite spice to use?

I like green cardamom pods, but have to remember to take them out when it's cooked!

I love green cardamom, if you split the pods and just use the seeds you dont have to worry about taking them out.

My favourite - Shahi Jeera (Royal Cumin or Black Cumin), very aromatic in pilau rice

Ground fenugreek seeds have to be a favourite of mine - I think its that spice that is the most closely associated with the aroma that can fill a whole house when a curry has been cooked.

Cumin I can sniff all day, straight from the jar - it's so warm and woody and everything!  And roasted, oooooh!! yum!

Yep,

Green Cardamoms and both black Cumin and regular Cumin.

I love the smell of Methi, fenugreek leaves, it's a great aroma

Totally agree on the Cumin, smells kinda sexy if you ask me!? :P

Ground cumin and dried fenugreek leaves are my favourite as they are the spices that are used in my fave curry which is Dupiaza, with fresh green chillies to give it a good punch!

For me its the smell of fresh chilli sizzling away in oil and then adding garlic puree, not a spice as such but the aroma is lovely.

Love the smell of coriander seeds being gently toasted in a frying pan, reminds me of popcorn
