I like this question!
If I had to pick my three favourite spices (other than the obvious main ingredients), I would pick:
garlic (fresh, powdered and bottled)
fenugreek (particulalry dry leaves) for the savoury flavour and aroma they impart
coriander (freash leaves added at the end of cooking)
I think all three ingredients add significant flavour and aroma to a curry that are absoultely indispensible in an authentic BIR curry!
Of course, also cardamom seeds, star anise.......

I see i already replied to this question with coriander seeds... Id like to add fresh coriander too.. love the stuff, cant believe some people think is tastes like washing up liquid

I love fresh Coriander so much I wouldn't even consider cooking a curry without it and of course birds Eye Chilli's these 2 ingredients completes any Curry dish for me hands down
