This is Khoan Vongs method and a very good method at that.. Can't distinguish between these and my Chinese! Apart from (IMO) mine are better... ;D

I think that that is probably what my wife had for dinner this evening; she told me that when she had finished, the pile of wing-bones surrounding her bowl looked like a scene from a horror film ... !

Thanks Phil, Edwin. Yes I am also a big fan of Khoan's cooking and recipies. I purchaced his first ebook when he released it and studied this and  his videos in depth  It was ashame when he pulled all his most popular vids off YouTube. But I belive he has now uploaded again...
He is quite approachable and very open about his cooking.

Same technique here using Khoans recipe, but I used this.
