Title: Carnation Condensed Milk

Use Carnation quite a bit - it adds great BIR flavour to Korma (daughter says my korma better than take away!), CTM, and recently used it with butter chicken with great results.

Used to use tinned stuff - but it only lasted for a few days, then had to throw loads away. This squeezy bottle last 4-5 weeks easily - much better than tinned stuff. Got it from Asda, but seems not all Asdas stock it.

Good tip! I usually freeze my extras after making a Chasni, but the squeezey bottle makes much more sense, even if it is a bit more expensive.

there's never any lying around long in my fridge - what's not used in curry goes in a real posh coffee (carnation, coffee, a little whiskey followed by water off the boil)

Are we talking the unsweetened evaporated milk or the sticky sweet condensed?
I've heard of putting the evaporated in base gravies etc but would have thought the condensed a bit sweet?

It is the thick condensed stuff - best stuff for a good korma, or even a CTM I would think.

my tin says evaporated milk. carnation is a well know brand in the uk. it pours and is a bit like single cream which i use the evap milk in place of.

My tin says 'peaches' but that doesn't make it Carnation Condensed Milk. Evaporated milk is a completely different, albeit milk based, product.

I used condensed milk in my base once in error, should have been carnation milk. The finished curry was far too sweet for me and thickened up to quickly.
Made a great CTM though which the kids loved so all was not lost.

i'm pretty sure it's the evaporated milk that i use ie not condensed milk.

this tin is from aldi.

ps i could not resist but the tin show raspberry's and i think black grapes.

i've not tried the condensed milk and will look out for it. your idea of using in CTM might just be an improvement i've been looking for. my local restaurant CTM is for defo a bit more thicker in terms of cream than mine. many thanks for the idea.

JerryM, if what you are making calls for it to be sweet and creamy ( Korma/CTM) then Carnation Condensed Milk is excellent,Evaporated Milk is unsweetened and tastes rank on it's own  :P

you know i would not be able to resist getting the tin out the fridge again. i've scoured the tin and no - no serving suggestions so they must be in the tin. i guess in today's world you can't rely on the ingredients list either.

Right, I'm off to Aldi tomorrow : no "Serving suggestion" will result in one tin, and a strongly worded letter of complaint,  being sent to each of the Advertising Standards Authority and the Food Standards Agency !  Odd that there's no picture of a horse, though ...

JerryM, my Mrs recently bought Carnation Condensed Milk in a tube (like tomato paste comes in) I think it was 170gms, handy to be able to use what you want then pop the cap back on, lasts three weeks once opened kept in the fridge.Cost

Jerry (spreadsheet master!), I know you like the milder curries, you must try condensed milk - I think it might give you that "missing" part in curries like korma, CTM, butter chicken, even the chicken mogul you like. Give it a go,  ;)

i've taken the plunge and ditched my evap milk - bought a tin of the condensed stuff today (home bargains - tropical sun brand too).

cooking CTM (zaal for the 1st time) tonight. spoon taste of the condensed milk is really promising as you say - tastes lovely jubley a sort of x2 the evap milk.

loved the taste of the condensed milk (made 2 off Zaal CTM). had real difficulty at dish cooking trying to pour out of tin - it don't (i would take lid off next time).

this for sure is a piece of the BIR jigsaw.

i feel i would only use in CTM and Korma. it adds that sweet taste in BIR that just can't be done with just sugar alone.

for other "single cream" dishes i'm not sold and would continue to use evap milk.

in short you need both depending on the dish.

well pleased meggeth raised this post. i know it's been discussed before but i'd clearly missed it last time round.

ps i felt i needed more than 1 chef spoon to get the right taste. i don't know for sure given my pouring difficulties but 2 chef seems more like.

took the tin lid off on last go and pours fine. 1 off level (the stuff does sit up slightly) chef spoon is spot on. i think much more would be too much.

Condensed milk can't be frozen so the other alternative is evaporated milk you just need to alter the sweetness with sugar or jaggery.
