many thanks all.

i've taken the plunge and ditched my evap milk - bought a tin of the condensed stuff today (home bargains - tropical sun brand too).

cooking CTM (zaal for the 1st time) tonight. spoon taste of the condensed milk is really promising as you say - tastes lovely jubley a sort of x2 the evap milk.

loved the taste of the condensed milk (made 2 off Zaal CTM). had real difficulty at dish cooking trying to pour out of tin - it don't (i would take lid off next time).

this for sure is a piece of the BIR jigsaw.

i feel i would only use in CTM and Korma. it adds that sweet taste in BIR that just can't be done with just sugar alone.

for other "single cream" dishes i'm not sold and would continue to use evap milk.

in short you need both depending on the dish.

well pleased meggeth raised this post. i know it's been discussed before but i'd clearly missed it last time round.

ps i felt i needed more than 1 chef spoon to get the right taste. i don't know for sure given my pouring difficulties but 2 chef seems more like.

took the tin lid off on last go and pours fine. 1 off level (the stuff does sit up slightly) chef spoon is spot on. i think much more would be too much.

Condensed milk can't be frozen so the other alternative is evaporated milk you just need to alter the sweetness with sugar or jaggery.
