h4ppy-chris,

please please post recipe or who's you've used.

this is one dish that for me regularly disappoints. there are so many different types or version - it means completely different things to people - in fact i feel it's the dish that has little consistency across BIR land.

any additional thoughts or ideas are always appreciated.

Looks lovely. Almost identical to my last effort in colour and texture.

I have to say, with no disrespect to Chris intended, for me this does not convey the perfect Madras :  there has been just one picture posted recently that I felt was 100% spot-on-- i.e., the target for which I would seek to aim -- and that was the one posted by Rob (http://www.curry-recipes.co.uk/curry/index.php/topic,5634.msg84575.html#msg84575), a.k.a. "Getonthegarabi".  For me, that looked like Madras perfection.  In yours, Chris, what are the small cream oval-to-round flecks that look like pulses ?

The curry is over some rice Phil, it's the rice poking though.

Ah, just me being stupid ("No change there, then").
Thanks, Chris !

Sometimes our pictures don't do our cooking justice ???  And sometimes the pictures may look far better than the actual dish tasted  ::)  That madras looks good to me Chris and you're obviously happy with the results which is what counts.  We all know whether we've cracked a particular dish or not by comparison with that from our local BIR or TA.
But that pic of Bobs madras sauce certainly makes my mouth water  :P :P ;D

And, yes Jerry.  I think you've summed up the madras perfectly.  It means so many different things to different people.  It's probably one on the most eaten curries from a BIR and everybody has their own idea as to how it should look and taste  :D

You're quite right, CH : should have thought of that.  Here is the same image after a quick tweak in Picasa :  now I can see why Chris was so enthusiastic !

Now i'm guessing here, but i'm sure Chris will confirm that the tweaked picture is probably closer to his dish than his own pic  ???  You'd almost say they could be two totally different dishes  :o :o
I must admit to taking several pics of my cooking before I post anything.  It's surprising how the flash or lack of and the different lighting can affect the final result.  Anal as it may be, if the pic isn't a good representation of my food, i normally won't post it or will make some kind of comment re. the colouring.  However, i really cannot be assed to bother tweaking it using a photoshop package though  ::)  Maybe i'll forward on any dodgy pics and let you transform them for me  ;D ;D

Nice one Chris!  Great madras.  I also think you hit nail directly on head with your recent post(s) on high temp cooking.

Rob  :)

Wish I could say the same thing but I am still missing that elusive 5%. Picture in the OP looks great.  :)

As Jerry says, definitely get a recipe up, along with details of the base and spice mix you used.

Hi h4ppy-chris, did you use Chewytikka's base and madras recipe? I did and it turned out excellent.

chewys base as a big influence on mine, it did defo help me to get to mine. My Madras as come from watching them cook it at the TA and trying to replicate it for the wife, she is the one that said " that's it you have got it " first time in 2 years of trying.

am really chuffed. i must admit that 17 min video was a real slog (yet much loved).

it's the red color that attracted me.
