Having made mainly rogan josh (wife's favourite) since joining this forum I thought I would try a different curry for myself.
I've not had a madras for ages so decided to try it tonight. I used curryhells recipe (thanks Dave for the recipe) with CAs base and mix powder.
The result - whilst cooking it I tried a little and it didn't taste right but after a few more minutes the sauce thickened and it was time to try it. Wow, best curry I've cooked yet. Very close to most of the madras I've had from BIR. I did add a couple of drops of lemon juice which wasn't in the recipe but don't think I will add it again as I'm not sure it gave anything. I did add a tsp mango chutney as per recipe and it did give a slightly sweet taste to it which I think helped to the overall taste.
I've been using pilau rice from this post

and its very close to the rice from my local TA. I think I added to much cumin seed tonight which did overpower it slightly.
Back to the madras, will definitely cook this recipe again but may try some other madras recipes from this recipe.

Thanks for the glowing report Chris. Any pictures?? I would certainly try Chewytikka's, Abdulmoheds and CA's madras recipes, all different but all very tasty. And for that matter any of the recipes in the Madras section of the Mains. There does seem to be a broad spectrum of flavour for this dish equalled by the heat spectrum :
. My recipe which I haven't published as such was simply borne out of trying to recreate a BIR madras I ate recently and enjoyed. Only the second ever BIR madras to touch my lips ;D

Sorry but no pics. Was so keen to tuck in and try it forgot to take any. Next time I will.
Will try some of the other madras recipes you mention but they have a lot to live up to
Also want to try a jalfrazi - any recommendations on best recipe for this?

Thanks for that Chris. All the other recipes i mentioned are tried and tested and come with many seals of approval so you won't be disappointed. Just check them out in the madras section of the forum and have a look in the picture section for the visual proof. There are many other recipes to try that are no doubt as good. Whichever you choose, i'm sure you'll enjoy the results.
As for the jalfrezi, again check out that section in the mains. CA has good reviews but it's one dish of his I haven't made yet. I've cooked jalfrezi several times but have always used Curry Barking Mad's recipe which isn't available on the site but from his book. The book is a steal at
