Roti / nan machine

I've just come across this roti/nan oven:

It looks interesting, but I'm not quite convinced the result for nan breads would be as good as with a tandoor.

Has anyone come across one of these or seen one in use in a restaurant / takeaway?

No, not seen one, but what immediately struck me was the similarity between the naan that features as the "poster slide" for the video : Roti_Naan_Clip.mpg

and the image that Stephen posted earlier with his blowtorch version :



I don't know how close Stephen gets in terms of flavour, but in terms of appearance I would say he is 100% there !

Indeed, I should have said that it was Stephen's photo that inspired me to take a look at alternatives to a tandoor.

I'd go one step further and say that the texture of Stephen's nan (it seems more fluffier) looks even better than what this machine can do

Not sure how much these machines are but my blow torch was about 15 quid.

Well spotted! They appear to cost about ?2500.

I wonder why they spike the dough with a spatula before the naan goes into the oven.

I also wonder what's in the blue spray bottle. Water? Or perhaps it's glass cleaner!

The price does seem prohibitive especially as you can't do other forms of tandoori cooking with this machine.

I guess they spike the nan to stop it inflating too much. It's interesting though that this isn't necessary with a normal tandoor.

No idea what the spray fluid is ....

A very nice bit of kit.  For that price though i'd be having  a professional tandoor installed.  From members' pictures on the site I believe many are already turning out quality naans without the use of either.  As for the spray, maybe melted butter / ghee or flavoured oil perhaps?
