Spice mix rub / coating for chicken

Hi all,

We tried one of these Maggi powder mixes for cook in bag chicken. It went down well. Living in a remote area they are not easy to come by. Has anyone a recipe for a spice mix for chicken I can cook in roasting bag or even BBQ ?

Do a tandoori chicken on the BBQ. Butterfly the chicken, as in remove the breastbone and flatten it out and marinade it overnight. There are probably hundreds of recipes on here. Have a look in the tandoori section. Ive be going with Blades tikka!

Skronk, there are no hard and fast rules for such rub and it really is down to what flavours you like. Take a lead from the ingredients list in the Maggi powder. You could just use a madras powder or make your own.


I often use chilli, paprika, oregano, a little lemon juice and a little yoghurt for BBQ chicken.

Hi,

Thanks for both replies.....I found this one last night. Going to try later today :

This rub will give fish or poultry an authentic Indian flavor that is as colorful as it is tasty. This rub is a little spicy so if you want to reduce the heat, cut the cayenne in half.
Prep Time: 10 minutes
Total Time: 10 minutes
Yield: Makes about 1/2 cup
Ingredients:

    1 tablespoon ginger
    1 tablespoon cumin
    1 tablespoon coriander
    1 tablespoon paprika
    1 tablespoon turmeric
    1 tablespoon salt
    1 tablespoon cayenne

Tried the mix today using half measures of everything to coat 2 breasts.

Excellent. Give it a try in a roasting bag. Succulent and tasty. I am using the chopped breasts in my next Madras.

Yum Yum......start my diet next week  :o
