just trying chewys 3 hour base unfortunately i cant play the video so am just going by the recipe.only thing im not sure about is when to add the spices and do you discard the froth on the second boil?

Hi and welcome Gratheslayer. 

Type the link Phil has given below into your browser and this will bring up the vimeo vid of the base as it will not embed in the site. 



Add the spice immediately after the tomato paste, once the onions are cooked.
Take the scum off at the end of the cooking period although as CT says there's some debate whether you need to or not.
