This one usually goes down well with my friends.
JHINGA MALAI CURRY
1lb-peeled prawns.
2tbs-oil.
2-small onions peeled and roughly chopped.
3-cloves of garlic peeled.
1/2 inch piece of ginger peeled and shredded roughly.
salt to taste.
1/2-1tsp chilli powder.
1tsp turmeric powder.
1 tomato chopped small.
1tsp sugar.
2tsp cream of coconut and a small bunch of coriander leaves chopped.
.METHOD.
1.Blend onion,ginger and garlicto a paste.
2.Heat oil in a wok and stir fry onion, ginger and garlic until golden brown.
3.add turmeric, chilli powder prawns and cream of coconut stir fry for 30-60 seconcs.
4.add tomatos, garam massala, salt and sugar, stir and cook until aroma rises, this should take no more than 5-6 min's on a high flame keep stirring and reduce the heat if necessary. do not over cook as the prawns will become rubbery.
5.serve garnished with coriander leaves chopped coursely.
6.serve with Basmati Rice.
Hope You try this one out and your succesfull. Mark.
