I have access to quite a few restaurant kitchens, I'll shoot a few of these vids...
should be interesting to compare, as it will involve a lot of different Chefs and Cooks.

Just a normal Tarka to start = Oil + G&G + Tom/Puree dilute, + Mix Powder and usually Chilli Powder.
It is just his normal Dhansak, "Chow" is my Nickname and it's just his banter.
He's a good mate and you might also here me telling him to "hurry up". ;D
The Dhansak powder is his own spice mix he blends and his "secret". (which probably helped him become NE Region Curry Chef 2012)
The usual service Dhal is started off with Oil, Salt, G&G, Haldi, Tej Patta, Cassia, Masoor and water.
I've never taken note of the exact recipe, but I'll ask the young cook, the next time I'm in.
