Base sauce vegetables

Some base sauces only use onions, garlic and ginger as vegetables while other base sauce recipes use vegetables such as cauliflower, peppers and carrots.  Does using additional vegetables make a big difference to the taste of a base sauce?

Yes. Try it and see. You may prefer one over the other.

I've never heard of cauli being used is a base but can't see why that would be a problem. Other recipes include cabbage, lemons (OK it's a fruit I know that), and tomatoes feature regularly (yes also technically a fruit lol).

Hi Welshman,

My own base sauce uses only onions, garlic, ginger and tinned tomatoes and produces a very nice base gravy.  Onions is key, if your base gravy is made of 90% onions, you're on the right track but you have to make sure that you give them a good long cook, if you want to release their sweetness that is.

it's well worth making the "KD1" base 1st and making this your yardstick.

after that for sure try those vegetables. all must be kept in balance that's the only real criteria along with personal preference.

green pepper was a instant hit for me but carrot too became important. currently cabbage has crept onto my windscreen.

i don't like to really mention but don't go too exotic - i once tried mooli and a step to far for me.

I always use CA's base ( it was the first I did and I've had great results in the final dishes so don't see a need to change just yet ) and the last time I added in some odd bits of different coloured capsicums found in the fridge and a couple of wilted ( old ! ) sticks of celery .. it still tasted the same to me although I'm not much of an expert yet  :)
