Hi Jerry
Do you make Madras much / ever?
ChewyTikka's madras is highly regarded and a personal favourite:

solarsplace/Stephen,
yes for sure - madras is a real fav - the plain curry sauce is really madras. i use secret santa's chilli sauce which makes the madras i'm used to from the midlands. have had a glance in the past at chewytikka's and not surprised it's well appreciated. i think from memory it uses kashmiri chilli which i rate too.
in fact before joining the site the best result i'd got was a dash of worcester sauce and a splash of chilli sauce. of course this site has made a vast difference and well appreciative.
pic of the sticky - it's what i follow to make each dish.
i suppose i'm hoping to much on the post. whenever i go out for BIR i always pretty much have the same dish - i guess the rest of us do the same. i always look at the section "chefs specials" - these are the dishes i'm interested in making to explore the full range of BIR.
trouble is for me after looking at the special section i always say next time and of course that never arrives - hence the post. have had a go at this before but worth another try.
