dose anyone have a bir madras recipe? base sauce and main dish to cook at home without having to use massive quantities like 15 onions etc, many thanks unclebuck.

Hi,
To get a decent BIR madras you are going to have to make up a base sauce of some description, try one of these fairly simple base's:

'hail to the curry king'!! thos recipes you supplied are cracking! the best ruby i ever done at home, like all of us i couldnt help but to have a little tinker with the base, made a hot and sour sauce, what a little gem of a site, again many thanks

That sounds along the lines of a Patia. Can you be a bit more specific and give us some idea how you made this and what adjustments you made.

it sounds a little odd i know, to make it sour in the base i put a 1 orange peel and tea spoon of tamarind, for hot and hand full of fresh chili.

did try there other base here but thought it had too much ground spices, they tend to repeat on me for ages.
a Chinese lady gave the tip for souring food, she uses dried orange peel, she dose a cracking hot and sour soup.

A simple base is what I always make now, glad you had good results. I went for a "sit in" last night and it wasn't a patch on my own, i actually felt good that it wasn't up to scratch
