as of 5 pm its on the stove but i couldn't`t run the video i`m on windows 7 is it absolutely necessary i take it theres no spices in the base

A simple and quick method to make that famous onion gravy (Garabi)
Hi All
Needed a Curry in a Hurry, made this 1 hour Pressure Cooker version.
Lightly spiced, producing a nice neutral flavoured base.
I've been experimenting with Branded powders, keeping it simple, for people just starting out. :)
What you need for this one
200ml vegetable oil, infused with Tej Patta and Cassia
500 ml of tap water
3kg Onions.
1 medium carrot,
Third medium Green capsicum .
Third medium Red capsicum
A quarter of white cabbage. (Small)
A handful of fresh coriander stalks.
Half bulb of Garlic.
2 inch piece of fresh ginger.
2 Green Chillis
3 tbsp of a tube of tomato puree. (M&S Italian)
1 tbsp of salt.
1 tbsp of Haldi. (Tumeric Powder)
1 tbsp of Bolst Hot Curry Powder.

just sampled the madras apart from me putting a little to much salt & fresh coriander in this was as good if not better than Saturdays take away & i`I've only made it for the first time todaygood call chef.  :)

If you just double the base, then unless you reduce it very heavily the resulting sauce will be watery and lacking in depth; if you /do/ reduce it heavily, then there may be insufficient sauce (i.e., the dish will appear unnaturally dry).  I would be inclined to increase all ingredients /pro rata/ with the exception of the hot spices such as the Kashmiri ground chillies which I would personally increase in the ratio 1.4:1 or 1.5:1 --  you can always make a curry hotter, but it is hellishly difficult to make one less hot unless you are willing to mix (e.g.,) yoghurt with it.

Hello people i started a thread a while back asking what was the best Madras recipe in their personal opinion and can't find it but this will do as it's the Recipe i was recommended and i have to say i was slightly sceptical to begin with as it seemed too simple but i was wrong it was DELICIOUS THANK YOU CHEWYTIKKA!!! i have Julians ebook and had his base in my freezer for months after falling out of love with cooking curry and decided to give this a go ,well all was going well till i added a teaspoon of mango chutney near the end of the finishing the curry out of habit and prior to this it tasted lovely, in fairness Julian recommended a half t spoon i think but i was a little tipsy and got all cheffy lol and it ruined it, so last night i followed the recipe to a tee but using the base gravy i had and Julians mix P and HALLEJUAH beautiful!!!! thanks again and was told it was the BEST curry I've cooked, my Missus reminded me 'less is more sometimes' and so true for this Curry, Thanks people
