Could I put the mix power and chilli power in with the tomato puree and add it all at once as a safe guard against burning the spices as they're usually add in quick succession.

Or you could double the hot oil, so everything in the tarka floats and there

I'll try next time as I don't want to add more oil, I suppose I could tilt the pan to make the oil deeper.

Watch my other video
Madras Sauce
My old (favourite) battered curry pan, pools the oil/tarka in the dent and works a treat for Madras and Vindaloo currys.
Also shows my original tip of using a lid to get maximum heat into the curry, without losing all the sauce through reduction.
