Saffron Base a Winner
« on: September 22, 2011, 10:12 PM »
The first Base I made (from memory) when I joined this Forum was sns's Saffron Base and my Curry's improved in leaps and bounds, then as time went on I tried other Base's with some ' Eureka'  :) moments and also some disappointments  :-\ My last three Base's have been chewytikka's using the whole Onions instead of cutting them to hopefully add a sweetness to the Base
Unfortunately my last attempt at chewy's Base was a bit of a disaster when most of the ground Spices added stuck to the bottom of the Pan and turned Black  :o I tried to salvage the Base but decided to dump it !
Then last Saturday remembering how good my first Curry's were I thought I would give the Saffron Base another go - only this time I added a medium sized Red Capsicum Pepper for sweetness and a Carrot,this Base turned out wonderfull filling the House with that T/A Aroma adding water to get the consistency to my liking made almost 5ltrs of Base  :) And the Curry's that followed were excellent !
I think I will be sticking to this Base and experiment more with different Curry's rather than my usual Madras and Jalfrezi ( til the next time  ;) :) )

sNs made the same improvements over 3 years ago, i.e. both red pepper and carrot were included.  Did you miss the thread here:

@emin-j

Glad you posted this - its jogged the memory. Not made the Saffron base for probably over 2 years myself. Seem to recall it was very nice, but at the time there were so many others to try and one sometimes forgets the ones that stand out. Think I will give it a go next too.

@George

So, now you are saying that it is OK to suggest other relevant forum posts to members?

Surely that can't be right, can it? judging by your previous reaction to the same thing?  ;) - http://www.curry-recipes.co.uk/curry/index.php?topic=6101.msg60705#msg60705

Sorry to slightly OT your post emin-j, but that had to be said.

That's a bit desperate isn't it  (and yes, off-topic)  as if you're looking for the most tenuous reason to start an argument. I stand by what I said in both threads/posts. There's no harm in repeating something, as long as there's no implied claim that it's some sort of new discovery or breakthrough.

The Saffron base was also one of my first forays into BIR cooking. It's a while since I made it but I do rate it highly. I think it's always a good idea to go back over previous recipes and the stuff you've tried before, as it can give some insight into the progress you've made (e.g. a dish you create when beginning with BIR will taste different/better after you've acquired more experience).

Surely any links to (pre)existing threads on a topic (which applies to George's post above AND SP's previous post in another thread) are useful to most reasonable members ?  ::)

Thank you for the link George I do remember seeing that Post now  ::) I did use a Red and Green Pepper as at the time the only Green Pepper I had was nowhere near the size required in the Recipe ( 225 gms I think ) so as I had a three pack of peppers ( Red/Yellow/Green) I thought adding the Red might sweeten the Base and the Base did turn out excellent.

I think sometimes It's easy to forget the success you have had previously when you think that next ' New ' Base could be the ' Holy Grail ' :)

emin-j,

both of the SNS base versions are spot on. the carrot, coriander stalk and pepper are key ingredients for either. not a recommendation but for info if not to hand i have made without the potato without upset.

the yield (15 off portions) is brill too.

Hi JerryM, Thinking about it I did add a small handfull of Fresh Coriander as I do like to add a small amount of this in any Base I make and unless there is a ' breakthrough ' Base that comes onto the scene I am happy to continue with the original ? Saffron Base + Red Pepper and a Carrot,the Colour was right so was the taste and the consistency plus the Curry's that followed were excellent  :)
When I look at the ingredients other than the Potato's it's very similar to many other popular Recipes including my favourite T/A's. ;)
