To be honest Jamie, you can buy them so cheap in bulk from most Asian stores that would it be viable to make them yourself?

I know they involve shrimp paste somewhere along the line....

'the classic 1000 indian recipes' has several recipes for papadums. I've been meaning to give them a go but haven't as yet. I like the idea of being able to flavour them but have not settled on a recipe to make.

The recipes in the book are for:

Sago Papadums
Potato Papadums
Spiced Lentil Papadums
Rice Papadums
Spiced Rice Papadums
Tapioca Papadums

The biggest problem is that all the recipes require the Papadums to be rolled and allowed to dry out which as the book suggests, take up to 1 day, 3 for the potato recipe!

Bob, are you thinking of Prawn Crackers when mention prawn paste? None of the recipes in the book contain it.
