Greetings everyone , from a dismal and wet Norwich.
What a fabulous site to find! I just love curries and as a fairly competent cook ( my wife and I own our own Tearooms) I have made various curries with but with little success.
Now I realize why! Following books and magazine recipes does not give the true curry taste, and as stated so many times on this site, its down to the base sauce.
This is where I get confused. So many variations! I even read a piece somewhere that there is no need to boil everything, just frying everything off will get the same results and raw ingredients should never be added to the gravy but cooked off in another spicy mix then added to the gravy. Going to be fun trying everything out though.

Welcome Sparker.
take your time and read as much as possible on the site, hopefully many aspects will clarify themselves, if not dont hesitate to fire out your questions to the forum.
most of the 'older' members on here will have the experience to sort out virtually anything you may ask
