Hi guys,

I wrote in to the local newspaper to get a recipe from a store that makes some amazing Indian.
They tell you how to make most of it. Hopefully this helps (and you can read the image)

Many thanks, Intercool.  My poor old eyes had trouble reading it at that size, but I've blown it up a bit and put the results up on Picasaweb as our image host is currently overdrawn.  Have a look at these and see if you think it's any easier to read.  (Click on one, then use the magnifying glass tool to enlarge it).

Where I live in Australia, Vindaloos are very spicy, yes, but not necessarily searingly hot as in BIR, they also have a splash of vinegar.
I'm told its because it's actually a Portuguese dish???
