He's posted a fair few recipes on youtube, I like his precooked chicken. Go to youtube and search for dipurajah1 (or find his many videos on this site).

Hi Vc,

Watched quite a few video's before finding this site.

I have opted for "ASIAN MEAT PREPARATION PROCESS"
Found it on the site yesterday some where, can't relocate it again today, have it printed out though.

One thing which does puzzle me a little though. Maybe you can help.

On some recipes it says to add "spice mix"
I have made my own from CA's spice mix recipe.

It may also say add curry powder too.

However, on CA's base sauce recipe. Spice Mix, in brackets is referred to as both. Spice Mix, & Curry Powder.

Are they both the same? If so, why does it say to add 1tsp Spice Mix. 1 tsp Curry Powder.

I assumed the two were seperate, & added a mild madras curry powder.

Can I make my own curry powder, & what's the difference in ingredients from the two.

eg. Curry Powder =
eg. Spice Mix =

Hope this makes sense.

Yes you can make curry powder easily.

From memory it's equal parts of cumin, cardamom, mustard seed, turmeric, fennel and coriander seeds, roasted and ground.  :)

Hello Vindy

Had a go at CA's Madras on Saturday.

Used his base mix, & his spice mix.

I just cannot believe the end result.
For years I have been messing with cook books, & although it's been ok.
It's always had that something missing.

Saturday, I was over the moon. I would have gladly paid for the curry I produced.

Hi Carl,

It is a bit confusing this one isn't it?

Usually, on this site at least, when a recipe refers to "curry powder" it is generally understood to be a commercial, shop bought curry powder such as Rajah Mild Madras.

However, when a recipe has actually been sourced from a BIR or TA, even though they may refer to it as "Curry Powder" it is probably spice mix, AKA base spice, curry masala, mixed powder, spice blend, curry spice and so on...

As VC say's, quite a few spice mixes do actually contain curry powder, which has been debated here before, as to why it is included.  I also add it to my spice mix because it does add something to it.  I do know when I've missed it out, I can really tell the difference.

My advice would be, if a dish asks for "curry powder"  replace with spice mix, unless like CA's, it specifies both!

Kinda makes things a little clearer now.

Another question if you could be so kind please.

In some recipes it's said to add "sweet Paprika"
Having looked in my local Asian supermarket, I seem only to be able to get a hold of "Paprika"

Is there a difference?

There's hot paprika and sweet paprika, you usually see the eperate ones in supermarkets.

Is this a chance for my initial input ?Hello everyone I'm Joe,new to this board.I enjoy cooking all sorts really and every now and again,I go 'Indian'.

On the subject of paprika powder though,I do recommend genuine Hungarian paprika of the 'kalocsa' or Szeged types.Be sure to check the source ingredient on the packet.That is 100% genuine Hungarian or 60-40%(as an example)Hungarian sourced and 'other' sourced paprika.There is a big difference in quality and taste.

The 'Indian' commercial brands are rough in comparison.
