new base

this is ca's chicken tikka recipe


this is the final chicken tikka madras its not as thick or dark as the picture looks it was only taken on my camera phone so quality is not great but the taste was ;D

Jamie,

Well done, and well done on getting your pics in the post ;D

Just a tip if your using wooden skewers, give them a good soak in water for about half an hour before using them.  This should stop them burning.

Which base have you used here or is it your own creation?  Likewise with the tikka?

the base i used was posted by admin the boss it just says new base the tikka is ca's recipe i did soak the skewers but they still burned ill stick some foil around the ends next time

Looks good to me, and thanks for posting pics.  I am currently go through a Madras phase at the moment but I'm using either my own base or CA's base, with CA's method.

i think i have a portion of ca's base left in the freezer ill try it with that next time just thought id give the new base a try it did turn out very nice with the admin base. id like a good patia recipe theres a couple on here ive seen and i have my own which ive used for years but dont think its authentic i dont really eat it its more for the missus

Hi Jamie,

Just been reading up on Admins base and back in 2007, it got some a pretty mixed review, ranging from 'the best' to being very bitter.  I think that's always been my reason not to give it a go.

As I understand, it is a real Bradford curry base so it should be the real deal.

Do you follow the recipe to spec?  By that I mean, everything, method, length of cooking, ingredients....?

yeh followed the recipe for quantity but cooked it my own way did not turn out bitter, i made sure i cooked out the garlic and onions to aviod the bitterness instead of just putting the garlic in the blender like the recipe says seems to work like that

Nice post jamieb ;) how did the final curry compare to your usual BIR? I find that the admin's new base is by far the best for madras and vindaloos as it's bang on the button for me :) but I'm a northern munky ;D

Give it a go Bez, you might just like it - it's the strongest flavoured base I've made to date and not suited to milder curries IMO but it's the dog's for me ;D

to be honest i don't order madras at my bir so couldn't really compare it but it was damn nice even my missus who usually goes for the pathia said she really enjoyed it so i had to have done something right as for the base its only the 2ND one I've done the other being Ca's think your right about this one suiting the hotter curries I'm nearly out now so ill be making this 1 again and Ca's both good bases for different curries
