Chilli Pickle

Ok I know this isnt a main dish but I'm hooked on this stuff, the green chilli pickle they serve in some restaurants with your poppadoms! tastes awesome, really good!

So has anyone got a recipe? Got a load of chilli plants on the go in work so will need to do something with them.

don't know if this is what your looking for mate but i have this recipe but iv never made it

50g mustard seeds crushed,50g freshly ground cumin seeds,25ml ground turmeric
50g garlic crushed,150ml white vinegar,75g granulated sugar,2 tsp salt
150ml mustard oil,20 small garlic cloves,450g fresh green chillies halved.

method
1) mix the mustard seeds, cumin, turmeric, crushed garlic, vinegar, sugar and salt in a sterilized jar or glass bowl cover and allow to rest for about 24 hours.

2) heat the mustard oil and gently fry the rested spice mixture for about 5 Min's add whole garlic cloves and fry for another 5 Min's.

3) add the halved green chillies and cook until tender but still green in colour this should take about 30 Min's on a low heat, cool thoroughly

4) pour into sterilized jar ensuring that the oil is evenly distributed if you are using more than 1 bottle. then leave to stand for 1 week before serving

I'd love a tried and tested recipe for this too. TN try geeta's chilli pickle if you haven't already, it's bloody lovely! Plays havoc with your guts (well with mine it does) but well worth it for the flavour and heat.

This is primarily a bump for this topic as I am really keen to find a good recipe to use in the LeSpice Jalfrezi I did recently.

Jamie, do you know how long this pickle lasts and have you made it yet?

Hi Axe

I have never made it don't know if ty ever did but would think with the amount of vinegar and oil in the recipe it would last at least 3 months.
Might give it ago at some point.

Thanks for the reply Jamie. Since asking I have come across several recipes that I have ear marked which are listed below. Of course I haven't tried them but if the pics (where available) are anything to go by, they certainly look interesting. I welcome any comments on them.

There are also some interesting looking chutneys on the Sanjeev Kapoor website too, that the last two are from.
