chicken chili massala

http://www.curry-recipes.co.uk/curry/index.php?topic=179.0 hi all i have just made a chicken chili massala using the base sauce from the link above, it tastes ok but tastes more like a curry from a jar than a restaurant although the family like it i was wondering if another base sauce would have given me more of a restaurant taste if antone can suggest one i would be very greatfull

i haven't made the base in the link (CK's) - it seems a very old recipe. i'd try something newer. the BE base is for me always a good starting point http://www.curry-recipes.co.uk/curry/index.php?topic=2815.

in terms of restaurant taste i've found it to be more about how the base is cooked than necessarily the ingredients that matters. u also need the basic building blocks in terms of dish ingredients ie ashoka g/g paste. u also need a good recipe for the dish and these are not that common. UB has a chilli recipe that might be of interest but given it's for the family i'd tend to go for a tikka masala (CK's does a nice job http://www.curry-recipes.co.uk/curry/index.php/topic,539.0.html). then try a few others. i have DD's on the list to try http://www.curry-recipes.co.uk/curry/index.php?topic=3793.0


each sort of piece of the jigsaw has to be in place. u need to identify where u think u're uncertainly and then post specific questions and if poss with pics to get the best possible help.
