Please help asap!!

Hi

I'm in the middle of making a curry base and the recipe is asking for 2 desert spoons of garlic and Ginger pur?e but I only have pase !! Is there a difference in strength or do i just add the same amount ?

My cooking is on hold until I recive an answer!!

Hi TRSS,

I would presume them to mean the same thing....fresh garlic and ginger blended into a paste/puree.

Which base is it to be sure?

Yes, I think it would be safe to assume that it's just fresh garlic and ginger (probably in ratio 2:1) blended with sufficient water to make a paste/puree.

It will do in the place of fresh...albeit with all the other ingredients they whack into it too...

Just to let you know the gravy turnned out really well for my first time !!

It was a little bit oily if I was to be picky,but I think that is down to me not letting it simmer long enough !! Can any one tell me how long i should be simmering it for for the oil to seperate ?? It dosent say in the recipe so I wasn't sure !! Also what will it look like when the oil seperates ??

Two or three hours might be required TRSS, even then the oil might not separate.  I wouldn't worry about it though, the oil will separate in the final curry and you can spoon off the excess and use it to make your next curries.

There will be a film or layer or oil on the surface.  Your best bet is to check out some of the photos in some of the other curry base threads.  I'd personally stir the oil back into the base anyway, though some people remove it and use it to cook subsequent curries.
