Base - What are the Basics

i've just made Razor's base which was a real challenge to me as there was such a lot in it that is totally different to what i do normally. http://www.curry-recipes.co.uk/curry/index.php?topic=4283.0.

the differences being:

1) type of whole spices
2) cooking time
3) type of soft spices
4) late on addition of soft spices
5) cooking method
6) the cooking end point

if anyone is interested i'm up for discussing further.

i've just made Razor's base

Why not try it out to your heart's content, with dozens of changes or whatever and then report back when there's something SIGNIFICANT to report, if there ever is. Or perhaps use twitter to report every little step of the way, like 19:25 - added coriander  19:26 added a splash more water and so on, all night?

Hi George,

This IS the Kushi base, and I made clear reference to that when I posted it.  I think what Jerry meant was, It was my "prefered base" that's all!

i think people underestimate the importance of cooking the chopped tomatoes and tom puree correctly. and integrating this into the base. if the tomato element of the base is done wrong then the final madras is never quite perfect.

We're talking about the base, right?  Don't BIRs just lob the whole lot in together and simmer the sh*t out of it for several hours?

PS:  I think what Jerry meant is that it's the "Kushi" base posted by Razor.  However, I think George is questioning the sense of members posting "the first thing that comes into their heads" without giving due thought about how appropriate or helpful it is.

How did I lose you Ray?  I think Jerry simply meant to say that it was you that posted the Kushi base recipe!  I don't know how to say it more clearly!  :-\

PS:  I am not suggesting that George was in any way questioning your post (if that's what you're wondering?)

No, that's fair enough, I was just worried that people may think that I was claiming the base to be my own creation, which it most certainly is not.

oh dear.

i really sorry about this.

1st the base is Kushi and Razor kindly post the recipe for me (and anyone else to try).

i made it exactly to spec. well almost i left out the cloves and reduced the chilli to 1 tsp.

the reason i made the base was that i do like the kushi spice mix (i always have it on stock). it is also very different to the approach that i use for all bases.

this post was about the generalities of making base. but i've had enough already and have better things to do.

a big thanks to Razor - i am greatly appreciative. i am happy to share with u my observations via pm.
